Instructions

1. Prepare the Caramel:

  1. In a medium saucepan, combine the granulated sugar and water over medium heat.
  2. Stir gently until the sugar dissolves. Stop stirring once the sugar starts to boil.
  3. Continue boiling until the mixture turns a deep amber color. Be careful not to burn it.
  4. Quickly pour the caramel into a 9-inch round cake pan or flan mold, tilting the pan to evenly coat the bottom. Set aside to cool and harden.

2. Prepare the Flan Mixture:

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the eggs, evaporated milk, condensed milk, vanilla extract, and salt until smooth.
  3. Strain the mixture through a fine sieve into another bowl to remove any bubbles and ensure a silky texture.

3. Bake the Flan:

  1. Pour the flan mixture over the cooled caramel in the cake pan or mold.
  2. Place the pan in a larger baking dish. Fill the larger dish with hot water halfway up the sides of the flan pan to create a water bath.
  3. Bake in the preheated oven for about 60-70 minutes, or until the flan is set. You can test for doneness by inserting a knife into the center; it should come out clean.

4. Cool and Serve:

  1. Allow the flan to cool to room temperature, then refrigerate for at least 4 hours or overnight to fully set.
  2. To unmold, run a knife around the edges of the flan and gently invert it onto a serving plate.
